AIR FRYER ROASTED CAULIFLOWER WITH HONEY-TAHINI DRIZZLE AND NUT CRUMBLE

This air fryer roasted cauliflower by Chef Nti Ramaboa offers a healthier and quicker cooking method compared to traditional oven-roasting. It's paired with a Honey-Tahini Drizzle and Nut Crumble for a burst of flavor and texture. Enjoy it on its own, stuffed into a pita, or as a flavourful side dish.
Roasted Cauliflower
Ingredients
For cauliflower
  • 1 head of cauliflower
  • 3 tablespoons olive oil
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cayenne pepper
  • 3 tablespoons honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped parsley
  • Lemon wedges for serving
  • Grated Parmesan cheese
  • Pomegranate seeds for plating
  • Toasted Nut Crumble for plating

For honey-tahini drizzle:
  • 2 1/2 tablespoons tahini
  • 1/4 cup cold water, more if needed to thin
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 1/2 tablespoons honey
  • 1/2 teaspoon salt
Procedure
  1. Preparation: Remove the outer leaves from the cauliflower and cut it in half.

  2. Marinade: In a small bowl, combine olive oil, melted butter, garlic powder, turmeric, cayenne pepper, honey, salt, black pepper, and chopped parsley. Brush this mixture generously over the cauliflower halves.

  3. Cooking: Set your air fryer to 190°C (374°F). Place the cauliflower halves in a single layer in the air fryer tray.

  4. Roasting: Air-fry for 20 to 30 minutes until the cauliflower is golden brown and fork-tender. Flip halfway through and brush with additional oil if needed. For a charred exterior, let it brown for an extra couple of minutes or char with a chef's torch or over the flame on your gas hob

For Honey-Tahini Drizzle:

  1. Combine all ingredients in a food processor and blend until smooth. The sauce should be pourable but not runny. If it thickens over time, add more water to reach the desired consistency.

Garnish and Serve:

  1. Transfer the cooked cauliflower to a serving plate. Drizzle with the Honey-Tahini sauce and garnish with chopped parsley, pomegranate seeds, and toasted Nut Crumble. Insert a steak knife in the middle for easy sharing.


This dish pairs beautifully as a side with steak, boerewors, and prawn kebabs, or can be enjoyed as a standalone vegetarian option.
